[Workshop] Foodscaping Asia III: Keeping up with Kecap - Foodscaping Live

Activity or Workshop Details: As a part of the Foodscaping Asia research venture and forthcoming Bloomsbury monograph series, at ICAS 13 we bring together two panels of interdisciplinary scholars who examine layers of Asian food environments through what we term macro-, micro-, and nano-scapes. Working with Hardian Eko Nurseto, an academic colleague who previously participated in Masterchef Indonesia, this proposal moves beyond the academic and empirical, enmeshing conference goers into a foodscape in which the landscapes and terrains of kecap are performed/constructed in real time. Participants will become part of an edible food experience, enacting a real-life foodscape in which traditions and culinary norms of Indonesian kecap and kecap manis, a vital ingredient to residents of Suarabaya and throughout Indonesia, are explored in a variety of settings, recipes and meal formats.
