Shivani Unakar is an independent researcher and writer particularly interested in themes of food culture and food systems in India. Trained in culinary operations and hospitality management, she has worked in restaurant kitchens, at a food media agency, in the field with small-holder coffee growers, and on the editorial team of India’s leading annual food and beverage trends report. She has also undertaken independent qualitative research projects on topics of regional cuisine, small-scale agriculture and local market systems, for clients spanning international universities to food FMCG brands. She is currently the Project Manager of the Millet Beer Project at Great State Aleworks, an Indian craft brewery seeking to incorporate native Indian grains into its beer production.
